3/4 teaspoon baking powder

1 cup brewed coffee ☕
1 tablespoon white vinegar
2 teaspoons vanilla extract πΏ
1/2 cup canola oil (107g)
Hot Fudge Sauce π«
2 tablespoons unsalted butter (30g)
2/3 cup heavy cream π₯
1/3 cup honey π―
1/3 cup brown sugar (66g)
1/4 cup cocoa powder (20g)
1 cup chopped dark chocolate (170g)
1 teaspoon vanilla extract πΏ
Buttercream Frosting π§
1 cup unsalted butter (226g)
4 cups powdered sugar (510g) π¬
1 tablespoon vanilla extract πΏ
1-2 tablespoons heavy cream π₯
Homemade Marshmallows π₯
2 cups white sugar (400g)
1/3 cup agave syrup or light corn syrup
1/3 cup water π§
1/2 cup water for gelatin
7 teaspoons gelatin (21g)
1/2 teaspoon fine sea salt π§
2 teaspoons vanilla extract πΏ
1 cup powdered sugar π¬
1/2 cup cornstarch π½
Instructions:
Chocolate Cupcakes π§
1️⃣ Preheat oven to 350°F and line a cupcake pan.
2️⃣ Sift flour, cocoa, sugar, espresso powder, baking soda, baking powder, and salt in a bowl.
3️⃣ In a separate bowl, mix coffee, vinegar, vanilla, and oil. Combine wet and dry ingredients, mixing until just incorporated.
4️⃣ Fill the cupcake liners and bake for 15-20 minutes. Cool completely.
Hot Fudge Sauce π«
1️⃣ Mix butter, cream, honey, brown sugar, and cocoa powder in a small saucepan.
2️⃣ Bring to a boil, then simmer for 5 minutes.
3️⃣ Remove from heat and add chocolate and vanilla. Stir until smooth, and let cool to room temperature.
Buttercream Frosting π§
1️⃣ Beat butter on medium-high for 2 minutes.
2️⃣ Add powdered sugar and mix on low.
3️⃣ Add vanilla and beat until smooth, adjusting with heavy cream if necessary.
Homemade Marshmallows π₯
1️⃣ Line a pan with parchment paper and dust with powdered sugar + cornstarch mixture.
2️⃣ Boil sugar, agave syrup, and water to 245°F.
3️⃣ Bloom gelatin in water, then slowly whisk in the hot syrup using a stand mixer.
4️⃣ Whip for 5 minutes until fluffy. Add vanilla.
5️⃣ Spread into prepared pan, dust with more powdered sugar mix, and let set for 6-8 hours.
To Assemble:
1️⃣ Core the center of the cupcakes and fill with fudge sauce.
