Ingredients
2 large mangoes, chopped into chunks
1 teaspoon lemon juice
3 tablespoons honey (or any sweetener of choice)
1 ½ tablespoons water
1 teaspoon unflavored gelatin powder
¾ cup unsweetened canned coconut milk or cream (full fat, refrigerated overnight; use only the coconut solids)
Tajin Seasoning (optional, for garnish)
Instructions
1. Prepare Mango Puree:

Peel the mangoes and chop them into cubes.
In a blender, combine the mango chunks, lemon juice, and honey. Puree until smooth. Set the blender aside. (Optional: Reserve a couple of tablespoons of mango chunks for topping.)
2. Bloom Gelatin:

In a small bowl, add the water and sprinkle the gelatin over it. Let it sit for 5 minutes to bloom (it will become a firm gel).
Heat the bloomed gelatin in the microwave for about 5 to 10 seconds until it turns liquid.
3. Combine Gelatin and Mango Puree:

Pour the liquified gelatin into the mango puree in the blender. Blend for another 30 to 45 seconds until well combined.
Transfer the mixture to a mixing bowl, cover, and chill in the refrigerator until it starts to thicken, about 1 hour. (Optional: Strain the mango puree through a fine mesh strainer to remove any fibrous texture if desired.)
4. Prepare Whipped Coconut Cream:

While the mango puree is chilling, make the whipped cream. Scoop the coconut cream solids from the can into a medium mixing bowl.
Using a handheld mixer, beat the coconut cream until soft peaks form. If you prefer a sweeter mousse, add a tablespoon of honey while whipping. Set aside in the refrigerator.
5. Combine Mango Puree and Whipped Cream:

Once the mango puree has thickened, gently fold the whipped coconut cream into the mango mixture until no streaks remain. The mousse will have a light, whipped consistency and will firm up further as it chills.
